WHere is a simplified take on a cocktail found on our latest drinks list. Designed as a batch prepared mix which is bursting with essence of a festive period, which makes it ideal for a festive gathering. Save the extra syrup you can use for brunch beverages, desserts, or to mix more rounds of this cocktail.

Yields 10 people
Ingredients for the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Premix (produces 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Citrus Syrup: Put every components inside a pot, heat until it reaches a light boil, mixing to dissolve. Then, remove from the burner and leave to reach room temperature entirely. Transfer into a sterilised bottle, cap it keeping it in the fridge, it can be stored for around one month.
For the Batch Mix: Mix all the spirits and syrup into a big jug, allow it to infuse for an hour, then pass it through best through cheesecloth, so it's completely strained.
For serving: Measure 85ml of your cocktail base into your cocktail shaker filled with ice, and stir gently for one minute to chill. Pour to a chilled martini glass or a similar vessel, garnish with a few cranberries and finish using a brief mist of the essential oil above the glass.
